30ml Curiosity Ruby Gin
30ml Aperol
15ml Lemon Juice
15ml Simple Syrup
Pink Prosecco or Sparkling Rosé
Slice of Lime to garnish
Place Gin, Aperol and lemon juice in an ice-filled cocktail shaker.
Shake together vigorously.
Strain into a large coupe or small wine glass filled with a handful of ice.
Top up with pink Prosecco or Sparkling Rosé.
Garnish with a fresh rhubarb stick or slice of lime.
